My family and I are not big on having dessert at home but once in a while we do crave a little something sweet after dinner, at least I do. Monday night was one of those nights. I was feeling especially accomplished after planning the kids lunches and dinners for the whole week the Sunday before. My feelings of zeal might or might not have been overrated given that the kids have a 4 day school week this week, but listen, 4 whole days of knowing exactly what you’re going to make for the week AND having all the ingredients bought ahead of time is no easy feat so yeah allow me to brag, don’t judge me!

Back to my dessert story. I wanted to make something quick and easy that involves very little labor. I remembered these amazing roasted apple & walnut tarts I had for the first time at a friend’s a few weeks ago. Let me tell you, these tarts were so good I had to ask for the recipe. When said friend pulled out the cookbook she had gotten the recipe from to take a picture of the recipe so she could share it with me; I instead asked for the recipe book title and ordered the book right there and then from Amazon while I was in her kitchen! The reason why I ordered it right away? The recipe book is titled, Real Simple Easy Delicious Meals. Go figure! I just saw the word simple and I was sold. Not only do I love all things simple but, anything simple that requires a few ingredients I always have handy in my kitchen is a plus in my book. If I can pull off making it look fancy too? Even better! I love making easy and simple meals that look, well, pretty and “glammish.”

These tarts are so easy to put together and I also like the fact that they’re not too sweet.

If you do have a preference for sweeter desserts, I suggest having these with vanilla ice cream for that extra sweetness or you can have them with a dollop of whip cream and they taste just as good. They’re so simple to make, my 11 year old son put them almost all together with very little assistance from me.

What you will need:

•1 apple cut up in small pieces

•1 half cup walnuts

•1 quarter cup brown sugar

•1 8-ounce sheet frozen puff pastry thawed


1. Heat oven to 400 F.

2. Cut puff pastry into squares and put them in a prepared muffin tin allowing the corners to stick out.

3. Combine apples, walnuts and brown sugar in a small bowl.

4. Divide the apple mix among the puff pastry squares and bake until crusts are golden brown for 22-25 minutes.

5. Let tarts cool for about 5-7 minutes before removing from the tin.

6. Dust with confectioners sugar and serve with ice-cream or whip cream.
