Am I the only one who gets the urge to bake when the weather is gloomy? I really miss the sunny weather we used to have in Texas around this time of the year. It doesn’t make it any better when I see my Texas based friends and family write about how hot it is over there, meanwhile we’re on the hunt for the sun this side.

Yesterday was rainy and grey all day. When I got off work I decided that baking something would lift my spirits but I didn’t want to bake anything complicated (go figure) or labor intense, I’m not much of a baker anyway, so I settled on some good old banana bread. I had some overripe bananas that I saved from a few days ago so it worked out perfect. This banana bread is super easy to make and is a quick and easy treat to have with some tea or coffee on a dreary day like today.

Ingredients:

3 ripe bananas mashed

3/4 cup sugar (you can do a full cup if you want it sweeter)

1 egg

1/4 cup melted butter

1/4 cup crushed walnuts (optional)

1 1/2 cup self raising flour

1 teaspoon pure vanilla extract

**Double the ingredients to make 2 loaves**

Directions:

1. Preheat oven to 325 degrees F (165 degrees C)

2. Combine everything but the flour until smooth

3. Mix in flour gently (fold in, don’t over mix)

4. Bake in preheated oven for 1 hour or until toothpick comes out clean when inserted in the bread

That’s it and you have delicious homemade banana bread!
