I’ve been reveling in the overwhelming response to my welcome blog post from last Friday. I was deeply moved by those of you who reached out from all corners of the world to acknowledge and congratulate me on embarking on my passion project journey and for those of you who signed up to receive notifications from the blog. A big thank you to all who read the post in its entirety and to all who shared their thoughts and feedback and emailed with topic suggestions surrounding family, faith and homemaking. It has been a whirlwind of a week for me and I’m thankfully embracing it all.

I am pleased to let you know that as I continue to share some of my experiences, I plan to collaborate with other women, wives, and mothers to share their experiences and opinions on certain topics that have anything to do with homemaking and beyond. I don’t know it all – I consider myself to be a lifelong learner who loves to continuously learn from other women from all walks of life who are thriving in their different roles and fields of expertise. From a quick analysis of the data I received regarding the areas you want to see more of on this platform, I would say top on the list is meal-prep. I love simple quick meals and I’ll be sharing some tips to help you save time when you meal prep as we move forward.
I’m thrilled to have you here! Let’s kick off with a recipe for my simple egg muffins that make for a quick and easy breakfast or brunch menu item. I made these for brunch and posted them on my Instagram account this past Sunday and I had some people asking for the recipe, give them a try for your weekend brunch this weekend and let me know how you like them.

Simple Egg Muffins

Ingredients


•8 eggs
•4 tablespoons milk (optional)
•2 tablespoons finely chopped onion
•Salt and pepper or seasoned salt to taste
•1/4 cup crumbled bacon or sausage
•1/4 cup shredded cheese
•A handful of chopped spinach
•1/4 cup chopped tomatoes

**Please note you can add or subtract fillings as you like**

Instructions

Preheat oven to 350
•Whisk eggs and onions together with seasoning to taste
•Add fillings of your choice to egg mixture
•Divide mixture evenly in a sprayed muffin pan and bake for 15-20 min
•Top with avocado, chopped tomato or additional cheese and or sour cream and serve.
